A brief History of The Bier Church series
Bier Church is a cheeky title meant to find praise for the fine yet simple aspects of beer.
Radegast has always strived to present an elevated cuisine and culinary experience beyond what one might expect of a traditional or ‘typical’ beer hall. Functionally, we are locked into seasonal menu changes which accommodate large festival-type crowds. Enter Chef Brian and the creative outlet of Bier Church was born. We highlight an individual brewery by looking at their beers through a fresh lens so the we can take the simplicity of beer, tease it apart and put the flavors back together in a new and interesting way.

Radegast Hall
Radegast Hall opened in November 2007. “Radegast” is a Slavic god, known amongst Baltic and Polabian Slavs as a powerful solar deity. He guided cycles of light, harvest, and protection, offering warmth and strength. Revered as a protector, he was known for his dual role as a god of hospitality and war, ensuring the prosperity and safety of his followers.
Radegast Hall is perhaps best known for its raucous weekend personality – loud live brass bands, big crowds, and liters of beer. Radegast has many sides, but at its core it has always been a simple place for communal experience, good food, and good beer.

Paulaner Brewery
Paulaner is a German brewery, established in 1634 in Munich, Bavaria, Germany by the Paulaner Order of mendicant friars. Now owned by the Schörghuber family, it is one of the six breweries which provide beer for Oktoberfest. Paulaner is Germany’s 6th best-selling beer.

Chef Brian Gruskin
Chef Brian Gruskin has a long history of cooking in New York City with other illustrious chefs and restaurateurs. Prior to helming the kitchen at Radegast, highlights of his career have included:
Michael psilakis: Opened Mia Dona (1 star new york times 4 months open); Worked every station at Anthos (1 michelin star); OpenedMP Taverna Williamsburg; Assisted with his cookbook “Live to Eat” and is recognized in the acknowledgements.
Tom Coliccchio: Opening team at Riverpark which received a 2 star NY Times review 8 months after it opened
